A cheater version of Thom Ka Gai. Ingredients:
1 whole chicken breast |
2 14-oz cans chicken broth |
1 14-oz can coconut milk |
1 yellow onions, sliced |
2 tablespoon green curry paste |
1 tablespoon vegetable oil |
Directions:
1. Slice onion into 1/4 half moon slices. 2. Cut up chicken into small strips - about 1/4 by 1 . 3. Sweat onions in oil until soft. 4. Add curry paste and broth. Bring to a simmer. 5. Add chicken, and cook until meat is no longer pink. 6. Pour in coconut milk and heat through. |
