A snap to prepare: Try using whole wheat tortillas for even more flavor and fiber. Prep: 10 minutes. Ingredients:
2 tablespoons creamy peanut butter |
3 tablespoons hot water |
1 tablespoon fresh lime juice |
2 teaspoons chili garlic sauce (such as lee kum kee) |
1/16 teaspoon salt |
1/16 teaspoon freshly ground black pepper |
4 (8-inch) flour tortillas |
1 1/3 cups shredded cooked chicken breast |
1 cup fresh bean sprouts |
1 cup red bell pepper strips |
1/4 cup shredded carrot |
1/4 cup chopped green onions |
1/4 cup minced fresh cilantro |
Directions:
1. Combine first 6 ingredients (through black pepper) in a medium bowl; stir until smooth. Spread 1 1/2 tablespoons peanut butter mixture over one side of each tortilla; top each with 1/3 cup chicken, 1/4 cup bean sprouts, 1/4 cup bell pepper, and 1 tablespoon each carrot, green onions, and cilantro. Roll up. |
