This is a good holiday dip... has a different twist on the usual spinach dip.... its quick and easy to make Ingredients:
1 cup chopped fresh spinach |
1 8-oz carton dairy sour cream |
1 8-oz carton plain fat free yogurt |
1/4 cup snipped fresh mint |
1/4 cup finely chopped peanuts |
1/4 cup peanut butter |
1 tablespoon honey |
1 tablespoon soy sauce |
1 to 2 teaspoons crushed red pepper flakes |

Directions:
1. In a bowl combine spinach, sour cream, and yogurt. 2. Stir in mint, peanuts, peanut butter, honey, soy sauce, and red pepper flakes. 3. Cover and chill for 2 to 24 hours. 4. Makes about 2 1/2 cups. 5. Serve with baby carrots or other vegetable dippers. |
