This is a recipe out of the South Beach diet quick and easy cookbook. I got it from a friend of mine. I do not diet, but this is so good! Ingredients:
1 t canola oil |
3 t fresh ginger |
1 small onion thinly sliced |
5 c chicken broth |
1-4-1/2 tsp red pepper |
1 head napa cabbage thinly sliced |
1 1/2 lb fresh shrimp |
2 t fish sauce |
2 tsp grated lime zest |
1/4 c lime juice |
1/2 c fresh cilantro |
Directions:
1. Heat oil in a saucepan over medium heat. 2. Add onion and ginger to oil and cook for about 3 minutes till soft. 3. Add broth and red pepper and heat to a low boil. 4. Add cabbage and cook for 2 minutes. 5. Add shrimp, fish sauce, lime zest, and lime juice. 6. Cook until shrimp is no longer pink about 1 minute. 7. Sprink with fresh cilantro and serve. |
