This lively dressing takes shrimp salad to a new level. You could add a little fresh crab meat, mussels or cooked squid to the salad too. Ingredients:
1 lime, zest and juice |
1 stalk lemongrass, roughly chopped |
1 red chili pepper, deseeded and chopped |
2 scallions, sliced |
1 tablespoon cilantro, chopped |
1 tablespoon fish sauce (nam pla) |
mixed salad green, for 4 people |
8 ounces jumbo shrimp, cooked and peeled |
Directions:
1. Place the lemongrass in a bowl with the lime zest and juice, chili pepper, scallions, cilantro, fish sauce and 4 tbs cold water.Arrange the salad leaves in a bowl. Place the shrimp on top and drizzle with the dressing.Serve immediately. |
