This is another recipe from WW that I make and really enjoy. It is again from a section of recipes for two, thus it serves two! Ingredients:
2 ounces uncooked linguine or spaghetti |
1/2 cup shredded carrot |
1/2 pound medium to large shrimp, cooked and peeled |
1 cup thinly sliced green leafy lettuce |
1/4 cup fresh cilantro leaves |
2 tbsp. chopped peanuts |
1/4 cup lime juice |
1 tbsp. chopped green onions |
2 tbsp. fish sauce |
2 1/2 tsp. sugar |
2 tsp. vegetable oil |
1 tsp. peeled grated ginger |
2 garlic cloves, minced |
Directions:
1. Bring 4 cups water to a boil in a large saucepan. Add pasta and cook 9 1/2 minutes. Add carrot; cook an additional 30 seconds. 2. Drain and let cool. 3. Combine pasta mixture, shrimp, lettuce, cilantro and peanuts in a large bowl; toss well. 4. Combine lime juice and next 6 ingredients in a small bowl; stir well with a whisk. Pour over pasta mixture; toss gently to coat. 5. Serve immediately. Serving size = 2 cups. 1 serving = 8 points. |
