This recipe is for a very aromatic dipping sauce. Namprik Kapi has a pungent fishy smell, but it's truly authentic dish ..This dish are serve with variety of vegetables, boil or raw and most of the time this dish a accompany by a deep fried fish, such as pla tu or any types of fishes. Ingredients:
2 tablespoons shrimp paste |
4 cloves garlic |
5-7 fresh red thai chile peppers |
3 tablespoons lime juice |
3 tablespoons fish sauce |
2-3 tablespoons palm sugar |
1 tablespoon tiny thai eggplant or tiger eggplant |
Directions:
1. In a mortar and pestle. Place shrimp paste and garlic in mortar, mash and grind together, until well form thick paste. 2. Add Thai chile peppers and eggplant (leaving a few eggplant aside for later). 3. Pound the mixture together, adding palm sugar, lime juice and fish sauce to suit your taste. 4. Spoon it into a dish and add a few eggplants for visual appeal. |
