I got this delicious salmon salad recipe from Recipezaar. Ingredients:
4 tbsp. fish sauce |
4 tbsp. lime juice |
2 tsp. brown sugar |
4 thai chilies, chopped |
1 1/2 lbs. salmon fillets |
1 tsp. olive oil |
1 onion, thinly sliced |
1 large tomato, chopped |
1 cup chopped fresh basil |
mixed greens |
Directions:
1. Preheat oven to 400 degrees F. 2. Prepare the dressing by combining the fish sauce, lime juice, brown sugar and chopped chilies in a small bowl; set aside. 3. Place the salmon fillets on a baking try and rub with olive oil. 4. Bake for 20 minutes or until the salmon flakes easily with a fork. 5. Let the fillets cool for at least 15 minutes. Then place them into a big bowl and break into big chunks with a fork. Add onion, tomato, and basil; pour the dressing over all and toss gently until mixed. Serve on individual plates over mixed greens. |
