Ingredients:
1 lb boneless chicken breast |
2 teaspoons canola oil |
1 romaine lettuce hearts |
4 green onions, sliced |
1/2 cup chopped peanuts |
3 tablespoons peanut butter |
1 tablespoon soy sauce |
1 tablespoon cider vinegar |
1/4 cup water |
1 teaspoon sugar |
1/4 teaspoon cayenne pepper |
Directions:
1. In skillet, brown chicken on both sides until juices run clear. 2. Cut into short strips. 3. Divide lettuce among individual plates. 4. Sprinkle with onions and peanuts; arrange chicken on top. 5. For sauce, combine all ingredients well. 6. Drizzle over salad. |
