Thai Papaya Salad (Som Tom) |

This salad is a classic dish from Northeastern Thailand. It is often quite spicy, especially when made authentically. Green papayas are often hard to find in the US, so carrots are often substituted. Ingredients:
1/8 cup chilies |
8 cloves garlic |
2 dried shrimp |
4 cups papaya |
1 cup green beans |
1 carrot |
1/4 cup tamarind juice |
4 tbsp lime juice |
2 tbs. fish sauce, to taste |
2 tbs. sugar |
2 tomatoes |
1/4 cup roasted peanuts |
Directions:
1. Mix the tamardind, lime, fish sauce, sugar, garlic and chilies together in a mortal and pestle (Traditional thai uses a wooden one to avoid bruising the papaya) and grind them together into a sauce. Then mix in the remainder of the ingredients and toss. |
