Thai Noodle Salad

Go easy on the crushed chilies if you don't like it too spicy. Green Cuisine Cookbook 2006
Ingredients:
100 g rice noodles, flat style
6 cups water
1 cup bean sprouts
2 cups spinach, washed and chopped
2 green onions, finely sliced
1/3 cup cilantro, chopped
1/4 cup fresh basil
1/4 cup roasted peanuts
1/3 cup peanut butter
2 tbsp soy sauce
2 tbsp lemon juice
2 tbsp rice syrup
1 garlic clove, minced
1 tsp dried chilies, crushed
Directions:
1. Bring the water to a boil, add the noodles and simmer for 10 minutes.
2. Drain noodles and let cool under water.
3. Toss vegetables and peanuts with cooked noodles.
4. Blend the dressing ingredients in a blender.
5. Add dressing to noodles & vegetables.
