Go easy on the crushed chilies if you don't like it too spicy. Green Cuisine Cookbook 2006 Ingredients:
100 g rice noodles, flat style |
6 cups water |
1 cup bean sprouts |
2 cups spinach, washed and chopped |
2 green onions, finely sliced |
1/3 cup cilantro, chopped |
1/4 cup fresh basil |
1/4 cup roasted peanuts |
1/3 cup peanut butter |
2 tbsp soy sauce |
2 tbsp lemon juice |
2 tbsp rice syrup |
1 garlic clove, minced |
1 tsp dried chilies, crushed |
Directions:
1. Bring the water to a boil, add the noodles and simmer for 10 minutes. 2. Drain noodles and let cool under water. 3. Toss vegetables and peanuts with cooked noodles. 4. Blend the dressing ingredients in a blender. 5. Add dressing to noodles & vegetables. |
