Thai Marinated Cucumbers

We used to eat out at Thai restaurants a lot and usually whenever we ordered something spicy they brought out a small bowl of cucumbers. They would be crisp, refreshing and sweet on the tongue a perfect cooling foil to the spicy food. Read more . This version comes from Sunset Oriental Cookbook.
Ingredients:
1/3 cup white vinegar
1/4 cup sugar
1/4 cup water
1/4 tsp salt
1 large cucumber
Directions:
1. In a small pan, combine vinegar, sugar, water and salt.
2. Cook over medium heat, stirring, until it boils and sugar is dissolved.
3. Remove from heat and let cool to room temp.
4. Peel or score cucumber if you want. Slice thinly about 1/8 inch thick. Place in a serving bowl.
5. Pour marinade over the cucumbers and stir to blend.
