A tangy mix of sweet, sour and hot, this salad makes an unusual appetizer or accompaniment to a spicy main course. Ingredients:
1 lime, juice and zest |
2 tablespoons fish sauce |
2 teaspoons superfine sugar |
2 garlic cloves, minced |
2 green chili peppers, deseeded and finely sliced |
2 mangoes, peeled, stoned and cut into matchstick strips |
2 carrots, cut into matchsticks |
2 zucchini, cut into matchsticks |
mint sprig, to garnish |
Directions:
1. Place the lime juice, fish sauce, sugar, garlic and chilis in a bowl and stir until the sugar has dissolved. 2. Place the fruit and vegetables in a bowl and toss with the dressing. 3. Sprinkle with the lime zest and garnish with mint sprigs. |
