Thai Hot and Sour Peanut Soup |

We enjoy this quick and easy Thai spin on hot and sour soup. We like to serve it with bean sprouts, fresh cilantro and lime wedges. Ingredients:
1/2 cup basmati rice |
3 cups chicken broth |
1 (5 ounce) package taste of thai spicy peanut salad dressing mix |
Directions:
1. Combine rice with 1 c water. 2. Boil and simmer 15 minutes. 3. Remove from heat. 4. Add broth and peanut dressing mix. 5. Stir to combine. 6. Return to medium high heat and simmer 4-5 minutes. 7. Stir and serve. |
