This recipe came from my Sunday supplement. I have not made it yet. Ingredients:
2 kg mussels, cleaned and debearded |
2 stalks lemongrass |
2 green chilies |
1 green pepper |
5 spring onions |
4 tablespoons oil |
2 garlic cloves, crushed |
3 cm of grated ginger |
lime, juice of, 2 |
400 ml coconut milk |
2 tablespoons of chopped coriander |
Directions:
1. Clean mussels. chop lemongrass, chillies green pepper, and spring onions and add to the pan with the oil, garlic and ginger. cook for 5 minutes. add the lime juice and coconut milk. Season and simmer for ten minutes. Stir in the mussels, cover and cook for 3-4 minutes until all the mussels have opened. sprinkle with coriander and serve with nice bread. |
