Like mango? This is a great way to make it...light and healthy. This mango salad can be serve with sticky rice or as it. Ingredients:
2 cups peeled and shredded green mango |
1/2 lb shrimp, peeled and devined leave the tail |
1/4 cup thinly sliced shallots |
2 fresh red chilies minced |
2 tablespoon thai fish sauce |
1 tablespoon sugar |
1/4 cup basil leaves, cut into thin strips (optional) |
2 tablespoon toasted peanuts, crushed (optional) |
1 spring chopped coriander (cilantro) leaves |
Directions:
1. Peeled Mango and shredded into thinly long slice. Remove any excess moisture from the mango with absorbent paper. 2. Washed, removed shell and devined shimp, bring to boil about 2 mintues. Drained and set aside. 3. In a large bowl, combine all ingredients then pile the salad onto a serving platter garnish with lettuce leaves 4. Serve with hot stickly rice. |
