Thai-esque Peanut Noonoos |

My ultimate comfort food. It also happens to be *semi* healthy, and a great vegan/vegetarian option! Generously serves 4 as a meal, or 8 as a side. Ingredients:
1 lb angel hair pasta or rice noodles |
2 cups broccoli slaw mix (optional) |
1 cup chopped tofu (i used wild woods baked thai spoutofu) |
finely sliced scallions |
chopped peanuts (optional) |
sauce |
2 tbsp crunchy peanut butter |
2/3 c rice vinegar |
2 tbsp hoisin sauce |
1 tbsp brown sugar |
1 tbsp fresh ginger, minced |
1 tsp cayenne pepper |
1 tsp crushed red pepper flakes |
few splashes tamari |
few splashes wok oil |
small splash sesame chili oil |
Directions:
1. Cook pasta according to package directions and drain. 2. In medium bowl, mix sauce ingredients. 3. Toss sauce and broccoli slaw mix (if using) with pasta while still warm. Garnish with scallions and peanuts if desired. 4. Serve warm or chilled. |
