This is a very nice side dish to go with any Thai cuisine. I love the wonderful tastes in this soup. Hope you do to0. Ingredients:
3 cups thai coconut water approximately 2 coconuts |
3 cloves peeled garlic |
2 piece peeled ginger |
1/4 cup freshly squeezed lemon juice |
1/4 cup cold pressed extra-virgin olive oil |
1/4 cup soy sauce |
1 tablespoon curry powder |
Directions:
1. Combine all ingredients in blender until smooth. 2. Pour into a serving bowl. 3. Using a ladle remove and discard any foam that rises to the top. 4. Garlish with avocado, chives, tomato, pepper, mint, basil and/or or cilantro. |
