                    This cucumber salad with a sour chili dressing goes perfectly with grilled chicken and fish. Ingredients: 
                    
                        
                                                1 cucumber, cut into ribbons with a peeler  |  
                                                1 gem lettuce, shredded  |  
                                                5 ounces bean sprouts  |  
                                                3 ounces cilantro, roughly chopped  |  
                                                3 ounces mint, roughly chopped  |  
                                                1 teaspoon rice vinegar  |  
                                                1/2 teaspoon light brown sugar  |  
                                                2 red chili peppers, deseeded and finely chopped  |

                                1. Mix the dressing ingredients together, stirring until the sugar has dissolved. 2.
