Beautiful to look at as well as taste, and yet vegetarian. Made it for my vegan relatives. Can be eaten hot, warm or even chilled. Ingredients:
2 cans, coconut milk ( not cream of coconut ) |
1 large pkg fresh frozen peas ( 40 oz ) |
1 large onion chopped |
1 piece ( 1 inch ) of ginger grated or to taste |
1 small bunch of thai or regular basil |
1 bunch of chives or scallions chopped |
1 large garlic clove minced |
salt and pepper to taste |
Directions:
1. Prep time does not include chilling 2. Thaw peas, cover with water and heat about 5 minutes until hot and drain well. 3. Meanwhile in a large pot with a bit of peanut oil, saute onion, ginger and till tender, add the garlic, chives and basil and cook and stir a few minutes longer. 4. Into the pot add the cans of coconut milk and bring to a boiil, stir in the peas and bring to a boil again. 5. Remove from heat, puree in a blender until smooth ,in batches. 6. Season to taste. 7. Add more fresh ginger to soup if desired. 8. Either serve this soup warm or well chilled. 9. Either way it's terrific! |
