Rice sticks can be be found in Asian specialty food markets or in the Asian section of most supermarkets. Ingredients:
2 cups snow peas, trimmed (about 8 ounces) |
1 (8-ounce) package rice sticks |
1 teaspoon dark sesame oil |
1/2 cup chopped green onions |
1 1/2 tablespoons minced peeled fresh ginger |
2 garlic cloves, minced |
1/2 cup light coconut milk (such as hokan) |
1/2 cup water |
1/4 cup tomato paste |
1 1/2 teaspoons curry powder |
1/2 teaspoon salt |
dash of ground red pepper |
1/4 cup minced fresh cilantro |
Directions:
1. Cook snow peas and rice sticks in boiling water 3 minutes. Drain well. 2. Heat oil in a large nonstick skillet over medium heat. Add onions, ginger, and garlic, and sauté 2 minutes. Stir in milk and next 5 ingredients (milk through red pepper); bring to a boil. Cover; reduce heat, and simmer 5 minutes, stirring frequently. Combine snow peas, rice sticks, and green onion mixture in a large bowl, and sprinkle with cilantro. |
