Bright, light and flavourful! I haven't tried this yet but it looked too beautiful not to post. From Thai-Choice. Ingredients:
1 mango, peeled and diced (or peaches) |
1 tomato, chopped and seeded |
1 tablespoon cilantro leaf |
1 1/2 tablespoons onions, chopped |
1 yellow capsicum, diced |
1 red chile, sliced |
1 tablespoon fish sauce |
2 tablespoons rice vinegar |
1/2 teaspoon black pepper |
1 tablespoon sugar |
Directions:
1. Combine liquids with seasonings. 2. Pour over rest of ingredients and mix. |
