Winner 2007 Farmers Almanac Peanut Butter Recipe Contest Ingredients:
1 lb chicken (cut into 1 inch strips) |
8 ounces linguine |
1 tablespoon olive oil |
1 cup chicken broth |
2 tablespoons honey |
1 tablespoon soy sauce |
1/4 cup crunchy peanut butter |
1 teaspoon cornstarch |
1 teaspoon ground ginger |
4 green onions (sliced) |
2 garlic cloves (minced) |
1 red pepper (cut into strips) |
Directions:
1. In a sauce pan, saute chicken in olive oil. Cook linguini according to package. 2. Remove chicken from pan and add broth, honey, and soy sauce. 3. Whisk in the peanut butter, cornstarch, and ginger. 4. Add onions and garlic, stirring constantly over low heat until blended. 5. Add the pepper and cooked chicken, cook until the sauce has thickened. 6. Serve over warm linguini. |
