Thai Chicken Stock Pot

A simple but nicely flavoured chicken stock/noodle pot
Ingredients:
● 2 chicken drumsticks
● 2 chicken thighs
● 1 large onion, chopped
● 1 red bell peppper, chopped
● 2 cloves garlic, crushed
● 2 red chillies, finely chopped
● 2 sticks lemon grass, bruised
● 1 inch cube of ginger, finely chopped
● 1 cup coconut milk
● 1 tbsp fish sauce
● 650ml chicken stock
● water, to cover
● spring onions, chopped for garnish
● 1 packages noodles
Directions:
1. Put all except sping onions and noodles in big pot
2. top up with water if the stock doesn't cover ingredients
3. bring to simmer ( 98℃)
4. Leave for 45-50 minutes stirring occasionally
5. add noodles bring to boil for 3 minutes or however long noodles take
6. Serve in big bowls and sprinkle spring onions over the top
7. NOTE: It is nice to remove the skin and bones from the chicken before serving if you have time
