A great way to enjoy Thai flavor for your guest Ingredients:
1 1/2 pounds boneless chicken breast |
2 tablespoons mild curry paste |
2 teaspoons oil |
2 teaspoons apple cider vinegar or chinese vinegar |
1 can coconut milk |
4 tablespoons soy sauce |
3 tablespoons dark brown sugar |
1 tablespoon corn starch |
2 tablespoons water |
3 cups cooked rice |
1/4 cup sliced green onions |
wooden skewers(soaked for 20 to 30 minutes prior to cooking) |
Directions:
1. Slice chicken into long strips 2. In a bowl, mix together curry paste, oil, vinegar, coconut milk, and brown sugar. 3. Divide curry sauce evenly into two bowls. 4. In one bowl mix together sauce with chicken and let marinate for 10 minutes 5. Thread chicken on wooden skewers and place on hot grill. 6. Cook chicken until well done or about 10 minutes. 7. In saucepan, heat remaining curry sauce over med heat. 8. Stir together the water and corn starch and add to sauce stirring well. 9. Cook over low/med heat until slightly thickened. 10. Remove chicken from grill. 11. Place rice on serving platter, top with chicken sticks and pour remaining sauce over. 12. Sprinkle with green onion slices 13. Serve 14. You can decorate the platter with grated coconut or sesame seeds if desired. |
