Thai Chicken Lettuce Wraps |

This is a great Thai recipe because it only has one semi-specialty ingredient, the Thai chili sauce, and it's not very expensive. I found it at the grocery store in my rural town, so I know it will be at your store! It's so, so good. Don't be tempted to leave out the raisins, because they really make it! Ingredients:
1 tablespoon olive oil |
1 1/4 lbs ground chicken |
1 teaspoon salt |
1/2 teaspoon ground pepper |
1/2 cup onion, chopped |
1/2 cup raisins (golden or regular) |
1/2 cup peanuts, coarsely chopped |
1/4 cup thai sweet chili sauce (or more, to taste) |
4 teaspoons lemon juice or 4 teaspoons lime juice |
1/4 cup fresh cilantro (optional- i leave this out!) (optional) |
1 head iceberg lettuce (or bibb, but it's expensive!) or 1 head green lettuce (or bibb, but it's expensive!) |
Directions:
1. Heat oil in pan and then brown ground chicken and onion with salt and pepper over medium-high heat. 2. Add raisins and peanuts. 3. Stir in Thai Chili Sauce. Heat for a few minutes, stirring occasionally. 4. Remove from heat and stir in cilantro, if using. 5. Pull off washed lettuce leaves and fill with Thai chicken mixture. 6. Enjoy! |
