Thai flavourings add a special touch to these quick and easy chicken burgers. Serve with salad. Ingredients:
1 lb skinless chicken breast |
1 red chili pepper, seeds removed and chopped |
1 teaspoon thai curry paste |
1 ounce cilantro, roughly chopped |
1 shallot, chopped |
1 garlic clove, crushed |
1/2 teaspoon gingerroot, finely chopped |
1 lime, juice of, only |
3 tablespoons olive oil, for frying |
salt and pepper |
Directions:
1. Dice the chicken meat and place in a food processor with the other ingredients. Blitz until well combined. 2. Using wet hands, shape the meat into even-sized burgers. 3. Heat the oil in a non-stick frying pan and fry the burgers for 4 minutes on each side, until golden and cooked through. |
