Thai Chicken and Coconut Soup |

Ingredients:
3 cups chicken stock |
1 teaspoon lime rind, grated |
1/4 cup lime juice, fresh |
1 tablespoon lemongrass, fresh peeled |
2 tablespoons fish sauce |
1/2 teaspoon ginger, minced |
1/2 teaspoon thai chile, minced |
1 lb chicken, boneless skinless cut into bite-sized pieces |
14 ounces coconut milk |
2 tablespoons cilantro, fresh chopped |
Directions:
1. Combine the 1st 7 ingredients in pot and bring to a simmer over medium heat. 2. Stir in chicen and coconut milk. 3. Cook 3 minutes or until chicken is done. 4. Sprinkle with cilantro and serve. |
