main dish Ingredients:
1/2 c water |
1 t lemongrass, fine chopped |
2 lb broccoli |
2 t oil |
2 cloves garlic, minced |
1/2 jalapeno pepper, fine chopped |
1/4 lb tofu, drained and cubed |
1 red pepper, small, seeded and in strips |
1/2 c coriander |
4 scallions, 1 slices |
2 t lime juice |
1 tamari to taste |
Directions:
1. Boil water, pour over lemongrass. Cut broccoli into small florets. Peel stalks and slice 1/2 thick. 2. Heat oil, add garlic, jalapeno and tofu, stirfry 1 min. Add broccoli, red pepper, lemongrass & water and coriander (if dried, not fresh). COver and cook on med hi 3 mins. 3. Stir in fresh coriander and scallions, cover and cook til tender-crisp - 1 or 2 mins more. 4. Sprinkle with lime juice and season to taste with tamari. 5. NOTE: Add rice stick noodles - good! |
