Ingredients:
1/2 cup chopped fresh mint, divided
2 tablespoons minced onion
3 garlic cloves, minced
1 (1-pound) flank steak
1 (5-ounce) package japanese soba noodles
1/3 cup fresh lime juice
1 tablespoon brown sugar
2 tablespoons reduced-sodium soy sauce
1/2 teaspoon salt
1 jalapeƱo pepper, minced
1/4 cup chopped green onions
2 carrots, scraped and shredded
1 cucumber, peeled, seeded, and sliced
1 red bell pepper, thinly sliced
1 green bell pepper, thinly sliced
cooking spray
4 cups shredded napa or savoy cabbage
1/4 cups roasted peanuts, chopped
Directions:
1. Combine 1/4 cup mint, onion, and garlic; rub over steak. Cover and chill 30 minutes.
2. Preheat broiler.
3. Cook noodles according to package directions; drain and rinse under cold water. Drain well, and set aside.
4. Combine 1/4 cup mint, lime juice, and next 4 ingredients in a large bowl; add noodles, and toss. Add green onions and next 4 ingredients; toss well
5. Place steak on a broiler pan coated with cooking spray. Broil steak 7 minutes on each side or to desired degree of doneness. Let stand 5 minutes. Cut steak diagonally across grain into very thin slices. Add to noodle mixture; toss well. Divide cabbage evenly among 6 plates; top each plate of cabbage with noodle mixture. Sprinkle with peanuts.
