Ingredients:
1/2 cup chopped fresh mint, divided |
2 tablespoons minced onion |
3 garlic cloves, minced |
1 (1-pound) flank steak |
1 (5-ounce) package japanese soba noodles |
1/3 cup fresh lime juice |
1 tablespoon brown sugar |
2 tablespoons reduced-sodium soy sauce |
1/2 teaspoon salt |
1 jalapeƱo pepper, minced |
1/4 cup chopped green onions |
2 carrots, scraped and shredded |
1 cucumber, peeled, seeded, and sliced |
1 red bell pepper, thinly sliced |
1 green bell pepper, thinly sliced |
cooking spray |
4 cups shredded napa or savoy cabbage |
1/4 cups roasted peanuts, chopped |
Directions:
1. Combine 1/4 cup mint, onion, and garlic; rub over steak. Cover and chill 30 minutes. 2. Preheat broiler. 3. Cook noodles according to package directions; drain and rinse under cold water. Drain well, and set aside. 4. Combine 1/4 cup mint, lime juice, and next 4 ingredients in a large bowl; add noodles, and toss. Add green onions and next 4 ingredients; toss well 5. Place steak on a broiler pan coated with cooking spray. Broil steak 7 minutes on each side or to desired degree of doneness. Let stand 5 minutes. Cut steak diagonally across grain into very thin slices. Add to noodle mixture; toss well. Divide cabbage evenly among 6 plates; top each plate of cabbage with noodle mixture. Sprinkle with peanuts. |
