Thai Banana And Green Chili Salad |

This recipe came from an estate sale. I obtained it when I purchased the family collection from the Marcus Estate in Greenville, Texas in 1994. Ingredients:
2 green chilies finely sliced |
1 teaspoon grated ginger |
1 tablespoon fish sauce |
2 tablespoons lime juice |
1 tablespoon brown sugar |
1/4 cup light coconut milk |
1 packet mixed salad leaves |
1 cucumber peeled and sliced |
1 cup snow peas |
1/4 cup fresh mint leaves |
1/4 cup fresh coriander leaves |
1/4 cup unsalted roasted peanuts |
3 small firm bananas |
Directions:
1. Place chilies, ginger, fish sauce, lime juice, sugar and coconut milk in a jar with a firm fitting lid. 2. Shake until well combined. 3. Combine salad leaves, cucumber, snow peas, mint and coriander in a bowl. 4. Pour dressing over top the slice bananas. 5. Top with roasted peanuts and bananas just before serving. |
