Runners World Ingredients:
2 medium avocados |
1/2 cucumber, cut into 1/2 inch slices peel on |
1 3/4 cups plain fat-free yogurt |
1/2 lime, juice of |
3 tablespoons chopped cilantro |
1/2 teaspoon tabasco sauce or 1/2 teaspoon chili paste |
1/2 teaspoon finely chopped lemongrass |
Directions:
1. Peel and pit the avocados, then place in a blender with the other ingredients and blend on high until very smooth (45 seconds-1 minute). Let the mixture rest in the fridge for at least two hours to blend flavours. Garnish with mint leaves and diced cucumber. |
