A traditional Moroccan condiment, a sort of onion-raisin jam. From Gourmet's Adventures with Ruth, episode Morocco. Ingredients:
1 cup golden raisin |
1 cup hot water |
3 tablespoons olive oil |
3 medium onions, sliced thinly pole-to-pole |
1 teaspoon kosher salt |
1 1/2 tablespoons ground ginger |
3 cinnamon sticks, each 3 inches long |
1 pinch turmeric |
1 pinch saffron, crushed to powder |
3/4 teaspoon ground black pepper |
2 cups white sugar |
Directions:
1. Soak the raisins in the hot water. 2. In a medium saucepan, heat the oil over medium heat until shimmering. Add onions and salt and cook, stirring often, until soft, 8-10 minutes. 3. Add ginger, cinnamon, turmeric, saffron and pepper. Cook, stirring often, 2 minutes. 4. Drain raisins and add to onions. Add sugar and simmer until thickened, about 10 minutes. Cool to room temperature, then refrigerate until needed. Keeps about 1 week. |
