I got this general recipe from the back of a box of baking mix and updated it to my own tastes. Its a very simple meal to make for a crowd as you can assemble it early in the day and bake it off 30mins before dinner. It couldn't be easier. Ingredients:
2 lbs ground beef |
2 (1 1/4 ounce) packages taco seasoning |
1 1/2 cups baking mix |
16 ounces refried beans |
8 ounces diced tomatoes with green chilies (not drained) |
1/4 cup water |
1/2 cup chunky salsa |
1 cup cheddar cheese |
Directions:
1. make taco meat according to package directions. 2. mix baking mix, refried beans, canned tomatoes and chilis and water in a small bowl. 3. Spread bean mixture at the bottom of 9X13 baking dish. 4. Spread taco meet on top of bean mixture. 5. top with salsa and cheese. 6. bake for 30-45 mins at 375 and serve with condiments of your choice. I like tortilla chips and sour cream. |
