Texas Twist Cornbread Dressing |

We made this a few weeks ago testing for the holidays.. It passed! It is not hot.. but such flavor! I hope ya'll enjoy! Ingredients:
1/2pound chorizo |
1/4 cup olive oil or butter |
2 cups each diced onion and celery |
1 tablespoon plus 1 teaspoon poultry seasoning |
1 teaspoon each salt and sugar |
3 cups chicken broth... can use canned |
1 8 oz bag corn bread for stuffing ... not stovetop |
4 cups stale bread, tear into small pieces.. or buy bread cubes |
4 eggs |
1 dozen cooked tamales sliced (that's the texas twist) |
Directions:
1. Heat oven to 325f 2. Fry chorizo in large skillet...breaking up as it cooks 3. Add the celery and onions 4. Stir for 2 minutes 5. Add poultry seasoning, salt, sugar and chicken broth. 6. Mix well 7. cover and reduce heat until veggies are just tender.. not mushy 8. Remove from heat, toss with breads, 9. Add the 4 eggs 10. Mix well 11. Add the tamales last... 12. Folding in gently so you don't break them up. Easier if they are cold 13. Place in a well greased 9x13 pan or 3 quart bowl.. or stuff bird 14. Bake 45 minutes COVERED 15. Bake additional 5 min... UNCOVERED 16. Diffrent, but good... |
