Texas Tortilla Oven Bake (Chalupa) |

I like to serve guacamole on the side. From the kitchen of Tona Thornburg Court, Bridgeton MO. Ingredients:
3 corn tortillas |
1/2 cup monterey jack cheese, grated |
1/4 cup lettuce, shredded |
2 tablespoons refried beans |
2 tablespoons cooked ground beef |
3 tomatoes, slices |
1/2 cup enchilada sauce |
Directions:
1. On oven-proof dish, spread refried beans over one tortilla. 2. Top with 1/3 of cheese. 3. Cover with second tortilla, spread beef and 1/3 of cheese. 4. Top with last tortilla. Spoon on sauce. Top with remaining cheese. 5. Bake at 350 degrees for 12 minutes. 6. Garnish with tomatoes and lettuce. |
