TEXAS STYLE SPANISH RICE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Hamm Estate in Plano, Texas in 1999. Ingredients:
1/4 cup chopped green pepper |
2 tablespoons oil |
1 cup uncooked long grain rice |
1/2 cup tomatoes with green chilies |
1/4 teaspoon turmeric |
1/4 teaspoon cumin |
1/2 teaspoon salt |
1/4 teaspoon garlic powder |
2 cups water |
2 tablespoons chopped cilantro |
Directions:
1. Sauté onion and green pepper in oil for 2 minutes then add rice and stir until well coated. 2. Add tomatoes, turmeric, cumin, salt, garlic powder and water then bring to a boil. 3. Reduce heat and simmer covered, for 20 minutes then add cilantro and serve. |
