These beans are an awesome side, whether it's BBQ or a nice holiday dinner. Ingredients:
2 pounds dries pinto beans |
4 quarts water |
1 pound salt pork, washed and diced |
1 onion, chopped |
1 clove garlic, minced |
1/2 teaspoon salt |
Directions:
1. Sort and wash beans. Place in a large Dutch oven and cover with water. 2. Let soak overnight. 3. Add remaining ingredients, and bring to a boil. 4. Reduce heat, cover and simmer 3 hours of until desired degree of tenderness, adding water when necessary. |
