These is a very tasty rice. The addition of cranberries and pecans makes this a very unique and very tasty rice dish. I like to serve it with grilled chicken and green beans
Ingredients:
1 tablespoon butter
1 tablespoon vegetable oil
1/4 cup chopped green onions
1/2 cup dried cranberries
1 cup brown rice
2-1/2 cups chicken broth
1 cup chopped pecans toasted
Directions:
1. Heat butter and oil in a small skillet then add green onions and saute until soft. In a medium saucepan combine onions, cranberries, rice and broth.
2. Cook covered 45 minutes.
3. To serve combine rice and pecans then garnish with green onion tops.
