Found this online looking for something to match a salsa that I had with grilled mahi mahi at a local restaurant. This came pretty close. Unique blend of flavors, that I love. Needs to chill overnight, and the next day. Read more . Gives ample time for flavors to meld together. Ingredients:
1/2 cups chopped texas spring sweet or texas super sweet onion |
2 cups diced fresh or thawed frozen peaches |
2 tablespoons finely minced, seeded serrano or other small hot |
chili peppers (optional) |
2 tablespoons chopped fresh cilantro |
3 tablespoons tequila |
2 teaspoons grated lime peel |
2 tablespoons fresh lime juice |
1/4 teaspoon ground cumin |
Directions:
1. Mix all ingredients and serve with Grilled Beef or seafood, or as a dip with tortilla chips. 2. Chill overnight to give flavors a chance to meld together |
