Ingredients:
1 cup all-purpose flour |
1 1/2 teaspoons salt |
1 teaspoon pepper |
1 (2 1/2- to 3-pound) broiler-fryer, cut up |
1 cup boiling water |
Directions:
1. Combine first 3 ingredients; mix well. Dredge chicken in flour mixture, and place in a lightly greased 13- x 9- x 2-inch baking pan. Pour boiling water over chicken. Bake at 375° for 15 minutes. 2. Broil 6 inches from heat for 10 minutes or just until chicken is lightly browned. 3. Reduce heat to 275°, and continue baking for 1 hour and 30 minutes. |
