Delicious and easy!!! I tend to make a dip using the beef, velveeta, & salsa. Using the leftover dip, I make eggs the next morning. Serve with toast, breakfast potatoes, or pancakes! Ingredients:
leftover ground beef (or 1/4 pound) |
1/2 cup velveeta diced |
1/4 cup prepared salsa (your favorite brand) |
4 eggs |
Directions:
1. If not using leftover ground beef, brown ground beef until no longer pink. 2. Drain fat from pan in a colander 3. With meat still in colander, spray pan with non-stick spray ( I prefer butter flavor) 4. Add eggs and scramble. 5. Just a couple minutes before they're done, Add diced velveeta cheese to pan. Allow to melt, stirring frequently so it doesn't burn to pan. 6. Add salsa and meat. 7. Heat thoroughly and serve! |
