Texas Corn With Onions And Peppers

This is a family favorite that stems back years and years. We love it and eat it all year long, especially good with fresh corn when the crops are plentiful. Enjoy
Ingredients:
2 pound bag frozen corn kernels thawed
1 large yellow onion finely diced
1 green bell pepper
1 red bell pepper
1 pickled jalapeno pepper
4 tablespoons chili powder
1 tablespoon ground cumin
1 tablespoon garlic powder
1 tablespoon hot paprika
16 ounces unsalted butter
1 bunch cilantro
Directions:
1. Thaw and drain frozen corn kernels.
2. Heat a large skillet over medium high and add 4 ounces of butter.
3. Add chili powder, paprika, cumin and garlic powder and fry 30 seconds to release oils.
4. Add finely diced onions, peppers and jalapenos then sauté until onions caramelize.
5. Remove mixture from skillet and set aside.
6. Add remaining butter and stir in thawed corn kernels.
7. Sauté corn 8 minutes until corn is hot and beginning to soften.
8. Return onion and pepper mixture to skillet and combine well with corn.
9. Remove from heat and add chopped cilantro and stir well then serve hot.
