This corn bread is a tasty bread from the normal corn bread the onions and peppers make it taste really good. Ingredients:
1-1/2 cups self-rising yellow cornmeal mix |
2 tbsp. sugar |
5 tbsp. butter, melted and divided |
1 cup chopped onion |
1 cup chopped green bell pepper |
1 cup sour cream |
1 cup creamed style corn |
1/2 cup shredded extra sharp cheddar cheese |
1 large egg |
2 large egg whites |
cooking spray |
Directions:
1. Preheat the oven to 425*F. 2. Combine the cornmeal mix and sugar in a large bowl, set aside. 3. Combine 3 Tbsp. butter,onion and next 6 ingredients (onion through egg whites) in a medium bowl, Stir well with a whisk 4. Add to cornmeal mixture stirring just until moist. 5. Pour batter into a 13x9 baking dish coated with cooking spray. 6. Bake 28 minutes or until a wooden pick inserted in center comes out clean. 7. Brush with 2 Tbsp. butter |
