A hearty chili that won third place out of 270 entries in a chili cook off. Competition Texas chili contains no beans, hence the reason there are none in listed in the recipe. However, feel free to add them if you prefer. It will not change the outcome in the least Ingredients:
2 tablespoons olive oil |
3 lbs chuck roast |
1 quart water |
1 chopped onion |
10 crushed garlic cloves |
1 (14 ounce) can diced tomatoes |
4 tablespoons chili powder |
1/2 teaspoon cayenne pepper |
3 tablespoons cumin |
3 tablespoons paprika |
1 teaspoon oregano |
1 teaspoon salt |
1 tablespoon sugar |
3 tablespoons flour |
6 tablespoons cornmeal |
1/2 cup water |
Directions:
1. Grind roast for chili meat and sear in olive oil until gray, not brown. 2. Stir in chopped onion and one quart water. Bring to a bubbling simmer and let simmer 1 1/2 hours. 3. Add all other ingredients except flour, cornmeal and water. let simmer for 3 hours. 4. Mix flour and cornmeal in 1/2 cup water and add to pot. Let simmer 30 more minutes. taste to see if more water or salt is needed. 5. Works beautifully in a crockpot as well. |
