This is a family favorite Appetizer. You can adjust the heat by using more or less jalapeno pepper. Serve with gluten free corn chips. Ingredients:
1 (15 ounce) can black-eyed peas |
1 (15 ounce) can black beans |
1 (12 ounce) can shoe peg corn |
1 bunch green onion |
2 fresh jalapeno peppers |
4 roma tomatoes |
1 bunch fresh cilantro |
2 garlic cloves |
gluten free italian dressing |
Directions:
1. Rinse peas, beans, corn. 2. Chop onions (including white part), jalapenos, tomatoes and cilantro. 3. Crush garlic. 4. Add all vegetable ingredients and add dressing to taste. |
