Fresh cilantro and garlic really wake up canned beans and corn in this quick and healthy dip/ side dish. Ingredients:
1 can black beans rinsed and drained |
1 can fiesta corn drained |
1/2 cup vegetable oil |
1/4 cup red wine vinegar |
3-4 cloves minced garlic |
1/4 cup sliced green onion, may substitue minced red onion |
1 cup chopped tomato |
1 chopped avacado |
handful fresh cilantro chopped |
Directions:
1. Combine all ingredients in a bowl and toss gently. 2. Serve with Frito scoops if desired. |
