This is a great, cool summer snack. Pair it with multi grain tortilla chips & enjoy the high fiber benefits. You can also use low fat Italian dressing if you are watching your waist line! Ingredients:
1 (15 oz) can black beans |
1 (15 oz) can black eyed peas |
1 (15 oz) can white hominey |
1 bottle italian dressing |
1 bunch green onions - chopped |
1 (4 oz) can diced green chile's |
3 roma tomatoes - diced |
4 tbs cilantro - diced |
Directions:
1. Drain canned items & add to large bowl. 2. Mix in Italian dressing & then add in remaining items. Cover & refridgerate overnight. |
