A delicious vegetable dish that is usually served with tortilla chips. This is very addictive and hard to stop eating. Definitely delicious! Ingredients:
1 cup celery, chopped |
1 small onion, chopped |
1 cup green pepper, chopped |
1 (14 ounce) can white shoepeg corn |
1 (14 ounce) can pinto beans |
1 (14 ounce) can black-eyed peas |
1 (2 ounce) jar pimientos (small) |
1 teaspoon salt |
1/2 teaspoon pepper |
1 tablespoon water |
3/4 cup vinegar |
1/2 cup oil |
1 cup sugar |
Directions:
1. Drain and rinse all canned veggies. 2. Chop all veggies and place in a container. 3. Pour sauce (recipe below) over vegetables in the container and marinade mixture overnight. 4. To Make Sauce:. 5. In a small saucepan, combine salt, pepper, water, vinegar, oil, and sugar. 6. Bring to boil until ingredients have combined. 7. Remove from heat and use while still hot. |
