This is a very simple Texas caviar recipe (we've had it in our recipe drawer for ages... it's typed on a yellowed piece of paper with an old-school typewriter!). Ingredients:
2 (15 1/2 ounce) cans black-eyed peas |
1 teaspoon garlic, minced |
1 bunch cilantro, chopped |
1 cup green olives, chopped |
1 onion, chopped |
1/4 cup olive oil |
2 fresh tomatoes, chopped |
3 teaspoons vinegar |
2 teaspoons lime juice |
1 dash salt |
1 dash pepper |
Directions:
1. Mix all ingredients in a bowl and serve with blue corn chips (although in our family we prefer to eat it on crispbread crackers)! |
